Stir Fried Chicken with
Vegetables
This is an easy and common dish in a Chinese family.
Preparation time up to 20 minutes, cooking time approximately 4 minutes. Serves
2.
1/4 lb chicken meat, diced
1/4 c. raw peanuts
3 dried red peppers, diced
1/4 c diced green peppers
1/4 c diced carrots
1/4 c diced celery
gingerroot, minced
garlic, minced
salt
soy sauce
sichuan peppercorn
corn starch
chicken stock
cooking oil
*to prepare sauce:
mix 2 table spoon of chicken stock with: 1 t soy sauce, 1/2 t
minced ginger root, 1/2 t. salt and 1t. corn starch.

mix diced chicken with 1 tablespoon of soy sauce and 1 teaspoon of corn
starch, set aside.

heat the wok, add 2 tablespoon of oil then add raw peanut for 30 seconds and
take them out.
3.
turn heat to low and add a pinch of peppercorn until fragrant, then discard.
4.
Stir fry the chicken meat until 80%cooked, add carrots cooked over medium
heat until cooked. Add celery, green peppers. Turn heat to high and
add minced garlic and sauce. Turn heat to high and quickly stir fry;
add peanut, mix well, remove and serve. |
