Ming's Recipes

The following are recipes from my home-style cooking class I.   I hope you will enjoy your experiment at home and let me know if you have any questions.

Stir Fried Chicken with Vegetables  

This is an easy and common dish in a Chinese family. 

Preparation time up to 20 minutes, cooking time approximately 4 minutes. Serves 2. 

1/4 lb chicken meat, diced
1/4 c. raw peanuts
3 dried red peppers, diced
1/4 c diced green peppers
1/4 c diced carrots
1/4 c diced celery
gingerroot, minced
garlic, minced
salt
soy sauce 
sichuan peppercorn
corn starch 
chicken stock
cooking oil  

*to prepare sauce: 
mix 2 table spoon of chicken stock with: 1 t soy sauce, 1/2 t minced ginger root, 1/2 t. salt and 1t. corn starch.

1. mix diced chicken with 1 tablespoon of soy sauce and 1 teaspoon of corn starch, set aside. 

2. heat the wok, add 2 tablespoon of oil then add raw peanut for 30 seconds and take them out. 

3. turn heat to low and add a pinch of peppercorn until fragrant, then discard.

4. Stir fry the chicken meat until 80%cooked, add carrots cooked over medium heat until cooked. Add celery, green peppers.  Turn heat to high and add minced garlic and sauce.  Turn heat to high and quickly stir fry; add peanut, mix well, remove and serve.

Tofu with Snow Peas

Preparation time up to 7 minutes, cooking time approximately 2 minutes. Serves 2.

1 lb of cleaned snow peas 
2 pieces of cooked five spiced tofu, sliced
oyster sauce 
black bean sauce
minced garlic
minced ginger roots 
corn starch 
chicken stock
cooking oil 

*to prepare sauce:
mix 2 table spoon of chicken stock with: 1/2 t soy sauce and 1 t. corn starch.

1. Heat the wok, add 2 tablespoon of oil. Turn heat to low and add a pinch of peppercorn until fragrant, then discard.

2. Add 1 teaspoon of black bean sauce and 1/2 teaspoon of minced ginger and stir fry tofu for 30 seconds on medium heat.  Then add snow peas and stir fry for 1 minute until the color turn crispy green. 

4. Turn heat to high, add 1/2 t. minced garlic and sauce.  Mix well, remove and serve.

Stir Fried Lomen

Preparation time up to 20 minutes, cooking time approximately 3 minutes. Serves 2. 

1lb precooked noodles
2 oz. of chicken meat, sliced
1/2 c. shredded onion
1/2 c. shredded carrots
1/4 c. scallion, sliced, 1 in. long
pressed 2 cloves of garlic
2 table spoon of oyster sauce
soy sauce
roasted sesame seeds
cooking oil 

1. Mixed the chicken with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. 

2. Heat the wok then add 2 tablespoon of oil, stir fry chicken with oyster sauce, 1 teaspoon of soy sauce.  Add garlic, carrots, onion and scallion, mixed well and then add noodles.  Stir for 2 minutes.  Sprinkle some sesame seeds and few drops of sesame oil.   Transfer to serving plate.

House Special Tofu

Preparation time up to 2 minutes, cooking time approximately 5 minutes. Serves 2.

1 pkg. soft tofu
1 t. minced garlic and ginger root
1 t. black bean sauce
minced garlic
minced ginger roots 
corn starch 
chicken stock
cooking oil 
dried hot pepper
sichuan peppercorn
chicken stock
cooking oil 

*to prepare sauce:
mix 2 table spoon of chicken stock with: 1/2 t soy sauce and 1 t. corn starch.

1. Heat the wok, add 3 tablespoon of oil. Turn heat to low and add a pinch of peppercorn until fragrant, then discard.

2. Add 3 dried red hot pepper, 1 teaspoon of black bean sauce and minced ginger into wok, cut tofu into 1/2 inch cubes and stir fry for about 2 minutes on high heat to make sure water from tofu evaporated.

4. Add minced garlic and sauce to thicken.  Stir and transfer to a serving platter and serve.
